Ingredients:

  • 500g beef, cut into bite-sized cubes
  • 1 large onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 medium potatoes, diced
  • 2 tablespoons vegetable oil
  • 2 carrots, sliced
  • 2 tablespoons tomato paste
  • 1 tablespoon soy sauce
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup beef broth or water
  • 1 teaspoon cornstarch (optional, for thickening)

Instructions:

  1. Sear the Beef: Heat oil in a large pot over medium-high heat. Add the beef and sear until browned on all sides. Remove and set aside.
  2. Sauté the Veggies: In the same pot, sauté onions, carrots, and bell peppers for 5–6 minutes until slightly tender.
  3. Add Seasoning: Stir in tomato paste, soy sauce, garlic powder, paprika, salt, and pepper. Cook for 2 minutes.
  4. Simmer: Return the beef to the pot. Add potatoes and pour in the beef broth. Cover and simmer on low heat for 45–60 minutes until the meat and vegetables are tender.
  5. Thicken (optional): Mix 1 teaspoon cornstarch with a bit of water, then stir into the stew to thicken the sauce.
  6. Serve: Enjoy hot with bread, rice, or your favorite side!
