For the Cake
- 4 large eggs
- 1 cup (200 g) sugar
- 1 cup (240 ml) milk
- ½ cup (120 ml) vegetable oil
- 2 cups (250 g) all-purpose flour
- 1 tbsp baking powder
- 1 tsp vanilla extract
- Pinch of salt
For the Brigadeiro Filling
- 2 cans (790 g) sweetened condensed milk
- 4 tbsp unsweetened cocoa powder
- 2 tbsp butter
- 1 cup (240 ml) heavy cream
For the Topping
- 200 g milk or dark chocolate (melted)
- ½ cup heavy cream (to make a ganache)
- Chocolate sprinkles for coating
Instructions
Step 1: Bake the Cake
- Preheat oven to 180°C (350°F). Grease and flour a bundt cake pan.
- In a large bowl, beat the eggs with sugar until fluffy.
- Add milk, oil, and vanilla extract, mixing well.
- Sift in the flour, baking powder, and salt, then gently fold until smooth.
- Pour batter into the prepared pan and bake for 35–40 minutes, or until a toothpick comes out clean.
- Let the cake cool completely before removing from the pan.
Step 2: Make the Brigadeiro Filling
- In a saucepan, combine condensed milk, cocoa powder, and butter.
- Cook over medium heat, stirring constantly, until it thickens slightly.
- Add heavy cream and cook for 2–3 more minutes until smooth and pourable.
- Set aside to cool slightly.
Step 3: Assemble the Cake
- Slice off the top of the cake and hollow out the inside slightly to create space for the filling.
- Pour the brigadeiro filling into the hollow, then replace the top layer of the cake.
- Cover the entire cake with chocolate ganache (melt chocolate + cream mixed together).
- Sprinkle generously with chocolate sprinkles, pressing them in gently to stick.
