  • ½ cup (120 ml) vegetable oil
  • 2 cups (250 g) all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp vanilla extract
  • Pinch of salt

For the Brigadeiro Filling

  • 2 cans (790 g) sweetened condensed milk
  • 4 tbsp unsweetened cocoa powder
  • 2 tbsp butter
  • 1 cup (240 ml) heavy cream

For the Topping

  • 200 g milk or dark chocolate (melted)
  • ½ cup heavy cream (to make a ganache)
  • Chocolate sprinkles for coating

Instructions

Step 1: Bake the Cake

  1. Preheat oven to 180°C (350°F). Grease and flour a bundt cake pan.
  2. In a large bowl, beat the eggs with sugar until fluffy.
  3. Add milk, oil, and vanilla extract, mixing well.
  4. Sift in the flour, baking powder, and salt, then gently fold until smooth.
  5. Pour batter into the prepared pan and bake for 35–40 minutes, or until a toothpick comes out clean.
  6. Let the cake cool completely before removing from the pan.

Step 2: Make the Brigadeiro Filling

  1. In a saucepan, combine condensed milk, cocoa powder, and butter.
  2. Cook over medium heat, stirring constantly, until it thickens slightly.
  3. Add heavy cream and cook for 2–3 more minutes until smooth and pourable.
  4. Set aside to cool slightly.

Step 3: Assemble the Cake

  1. Slice off the top of the cake and hollow out the inside slightly to create space for the filling.
  2. Pour the brigadeiro filling into the hollow, then replace the top layer of the cake.
  3. Cover the entire cake with chocolate ganache (melt chocolate + cream mixed together).
  4. Sprinkle generously with chocolate sprinkles, pressing them in gently to stick.

Step 4: Serve

  • When sliced, the warm brigadeiro filling will ooze out, creating the perfect molten effect!

Tips & Notes

  • Use high-quality cocoa powder for a richer chocolate flavor.
  • Make sure the brigadeiro filling is warm and creamy, not too thick, so it flows nicely.
  • This cake can be stored in the fridge for up to 3 days—just warm the slice slightly before serving for the molten effect.
  • For extra indulgence, serve with a scoop of vanilla ice cream or fresh strawberries.
