Ingredients

  • For the crust:
  • 1 ½ cups crushed digestive biscuits or graham crackers
  • 6 tbsp unsalted butter, melted

  • 1 cup sugar
  • 2 tbsp all-purpose flour
  • ¼ tsp salt
  • 2 cups whole milk
  • 1 tsp vanilla extract
  • ½ tsp ground nutmeg or cinnamon (optional)

Instructions

  1. Prepare the crust
    • Mix the crushed biscuits with melted butter and sugar until the texture is like wet sand.
    • Press firmly into the bottom and sides of a pie dish.
    • Chill in the fridge for 20 minutes, or bake at 170°C (340°F) for 8–10 minutes for a firmer crust.
  2. Make the custard
    • In a bowl, whisk eggs, sugar, flour, and salt until smooth.
    • Slowly add the milk while whisking continuously.
    • Stir in vanilla extract (and nutmeg or cinnamon if using).
  3. Bake the pie
    • Pour the custard mixture into the prepared crust.
    • Bake at 175°C (350°F) for 40–45 minutes, or until the top is golden and the center is set but slightly jiggly.
    • Remove and let cool completely.
  4. Serve & enjoy
    • Slice and serve at room temperature or chilled.
    • Top with whipped cream, fresh berries, or a drizzle of caramel if desired.

  • For extra creaminess, use half-and-half or add a splash of heavy cream to the custard.
  • Let the pie cool completely before slicing for clean, neat pieces.
  • Store leftovers in the fridge for up to 3 days.
