Fajita Chicken Casserole

🌮 Fajita Chicken Casserole Recipe

Ingredients:

  • 4 cups shredded cooked chicken
  • 2 cups instant rice (uncooked)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10 oz) Rotel (diced tomatoes & green chilies), undrained
  • 1 cup sour cream
  • 1 packet fajita seasoning mix
  • 1 cup chicken broth
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 ½ cups shredded Mexican blend cheese (or cheddar/Monterey Jack)

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, combine: shredded chicken, instant rice, cream of chicken soup, Rotel, sour cream, fajita seasoning, chicken broth, and chopped bell peppers.
  3. Mix well until all ingredients are fully combined.
  4. Pour mixture into a greased 9×13 baking dish and spread evenly.
  5. Sprinkle shredded cheese on top.
  6. Cover with foil and bake for 30 minutes.
  7. Remove foil and bake for another 10 minutes, until cheese is melted and bubbly.
  8. Garnish with chopped cilantro or green onions if desired.
