🌮 Fajita Chicken Casserole Recipe
Ingredients:
- 4 cups shredded cooked chicken
- 2 cups instant rice (uncooked)
- 1 can (10.5 oz) cream of chicken soup
- 1 can (10 oz) Rotel (diced tomatoes & green chilies), undrained
- 1 cup sour cream
- 1 packet fajita seasoning mix
- 1 cup chicken broth
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 ½ cups shredded Mexican blend cheese (or cheddar/Monterey Jack)
Instructions:
- Preheat oven to 350°F (175°C).
- In a large mixing bowl, combine: shredded chicken, instant rice, cream of chicken soup, Rotel, sour cream, fajita seasoning, chicken broth, and chopped bell peppers.
- Mix well until all ingredients are fully combined.
- Pour mixture into a greased 9×13 baking dish and spread evenly.
- Sprinkle shredded cheese on top.
- Cover with foil and bake for 30 minutes.
- Remove foil and bake for another 10 minutes, until cheese is melted and bubbly.
- Garnish with chopped cilantro or green onions if desired.
