Ingredients:

  • 1 large cauliflower head
  • 3 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tsp paprika (optional)
  • ½ tsp chili flakes (optional, for a spicy kick)
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the cauliflower:
    • Remove the outer leaves and trim the stem of the cauliflower, but keep the core intact.
    • Slice the cauliflower into thick “steaks” (about 1–1.5 inch thick).
  2. Season:
    • In a small bowl, mix olive oil, garlic, paprika, chili flakes, salt, and black pepper.
    • Brush both sides of the cauliflower steaks generously with this mixture.
  3. Roast:
    • Preheat the oven to 220°C (425°F).
    • Place the cauliflower steaks on a baking sheet lined with parchment paper.
    • Roast for 20–25 minutes, flipping halfway through, until golden brown and crispy on the edges.
  4. Serve:
    • Garnish with freshly chopped parsley.
    • Serve warm as a side dish or even as a vegetarian main course.

Tips:

  • For extra flavor, sprinkle grated Parmesan cheese during the last 5 minutes of roasting.
