Ingredients
For the Bread
- 1/2 cup (115g) unsalted butter, softened
- 2/3 cup (130g) granulated sugar
- 2 large eggs
- 1 1/2 tsp vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 1 3/4 tsp baking powder
- 1/2 cup (120ml) milk
Apple Mixture
- 1 large apple (peeled and chopped small, about 1 to 1 1/2 cups)
- 2 tbsp granulated sugar
- 1 tsp ground cinnamon
Cinnamon-Sugar Swirl
- 1/3 cup (70g) brown sugar (light or dark)
- 1 tsp ground cinnamon
Glaze (optional but delicious)
- 1/2 cup (60g) powdered sugar
- 1–2 tbsp milk or cream
Instructions
- Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
- Make apple mixture: In a small bowl, toss the chopped apples with 2 tbsp sugar + 1 tsp cinnamon. Set aside.
- Make cinnamon swirl: In another bowl, mix brown sugar + 1 tsp cinnamon.
- Prepare the batter:
- Cream butter and sugar until light and fluffy.
- Beat in eggs one at a time, then add vanilla.
- In a separate bowl, whisk flour + baking powder.
- Add dry ingredients to wet mixture alternately with milk until smooth.
- Assemble:
- Pour half the batter into the loaf pan.
- Add half the apple mixture and half the cinnamon-sugar swirl. Lightly swirl with a knife.
- Repeat with remaining batter, apples, and cinnamon mixture. Swirl again.
- Bake: 50–60 minutes, or until a toothpick comes out clean. Let cool 15 minutes in pan, then transfer to a wire rack.
- Glaze (optional): Mix powdered sugar with milk until smooth. Drizzle over cooled bread.
🍏 The result: soft vanilla loaf, juicy apple pockets, and a sweet cinnamon swirl — almost like an apple fritter in bread form!
