Cinnamon Swirl Apple Fritter Bread

Ingredients

For the Bread

  • 1/2 cup (115g) unsalted butter, softened
  • 2/3 cup (130g) granulated sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1 3/4 tsp baking powder
  • 1/2 cup (120ml) milk

Apple Mixture

  • 1 large apple (peeled and chopped small, about 1 to 1 1/2 cups)
  • 2 tbsp granulated sugar
  • 1 tsp ground cinnamon

Cinnamon-Sugar Swirl

  • 1/3 cup (70g) brown sugar (light or dark)
  • 1 tsp ground cinnamon

Glaze (optional but delicious)

  • 1/2 cup (60g) powdered sugar
  • 1–2 tbsp milk or cream

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
  2. Make apple mixture: In a small bowl, toss the chopped apples with 2 tbsp sugar + 1 tsp cinnamon. Set aside.
  3. Make cinnamon swirl: In another bowl, mix brown sugar + 1 tsp cinnamon.
  4. Prepare the batter:
    • Cream butter and sugar until light and fluffy.
    • Beat in eggs one at a time, then add vanilla.
    • In a separate bowl, whisk flour + baking powder.
    • Add dry ingredients to wet mixture alternately with milk until smooth.
  5. Assemble:
    • Pour half the batter into the loaf pan.
    • Add half the apple mixture and half the cinnamon-sugar swirl. Lightly swirl with a knife.
    • Repeat with remaining batter, apples, and cinnamon mixture. Swirl again.
  6. Bake: 50–60 minutes, or until a toothpick comes out clean. Let cool 15 minutes in pan, then transfer to a wire rack.
  7. Glaze (optional): Mix powdered sugar with milk until smooth. Drizzle over cooled bread.

🍏 The result: soft vanilla loaf, juicy apple pockets, and a sweet cinnamon swirl — almost like an apple fritter in bread form!
