Cheesy Beef-Stuffed Flatbread Pockets

  • 500g (1 lb) ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1/2 tsp ground cumin
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • Fresh parsley, chopped (optional)
  • 8 small flatbreads or tortillas
  • 1 egg yolk (for brushing)
  • Butter (optional, for brushing after baking)

Instructions:

  1. Prepare the beef filling:
    In a skillet over medium heat, add olive oil. Sauté chopped onion until translucent, then add garlic. Cook for 1 minute.
  2. Cook the beef:
    Add the ground beef and cook until browned. Stir in paprika, cumin, salt, and pepper. Cook until the beef is fully done and well-seasoned. Remove from heat and let it cool slightly.
  3. Assemble the pockets:
    Lay one flatbread or tortilla on a flat surface. Place a spoonful of beef mixture in the center, then top with a generous amount of mozzarella and cheddar cheese. Sprinkle some chopped parsley if desired.
  4. Fold the bread:
    Fold the edges of the flatbread over the filling to form a square or pocket. Place seam side down in a greased baking tray.
  5. Brush the tops:
    Lightly brush each pocket with beaten egg yolk to help it brown beautifully in the oven.
  6. Bake:
    Preheat the oven to 190°C (375°F). Bake for 15–20 minutes, or until the tops are golden brown and crispy.
  7. Optional:
    Brush with melted butter after baking for extra richness.

Serving Tip:
Serve warm with a side of yogurt sauce or a fresh salad. These cheesy beef pockets are perfect for lunchboxes, family meals, or gatherings!
