Ingredients:
- 6 large potatoes (washed and scrubbed, skin on)
- 150g (about 5 oz) cheddar cheese, sliced or grated
- 6–8 slices of bacon
- 2 tablespoons butter
- Salt, to taste
- Black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Prepare the Potatoes:
- Preheat your oven to 200°C (390°F).
- Wash and scrub the potatoes well. Pat dry.
- Using a knife, cut a slit lengthwise in each potato without cutting all the way through.
- Insert thin slices of butter into each slit. Season with salt and pepper.
- Bake the Potatoes:
- Place the potatoes on a baking tray lined with parchment paper.
- Bake for about 50–60 minutes or until the potatoes are tender inside and crispy outside.
- Cook the Bacon:
- While the potatoes bake, line another tray with parchment paper.
- Lay the bacon strips flat and bake in the oven at the same temperature for about 10–15 minutes, or until crispy.
