Ingredients:

  • 8 slices thick-cut bread (sourdough, brioche, or rustic white are best)
  • 8 strips thick-cut bacon
  • 2 tablespoons unsalted butter, softened
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • ½ cup Monterey Jack cheese, shredded (or Swiss for extra flavor)

Instructions:

  1. Cook the bacon
